I am a huge fan of cookbooks so when I received The Amish Family Cookbook by Jerry and Tina Eicher I was ecstatic. It’s filled with simple and easy to do recipes. I have been known to sit and read cookbooks for hours. This particular one has brought me back to reading it three times now! There are several recipes I am going to try. I have many willing food testers on hand in my house and with the dishes described in the book I am pretty sure they won’t be disappointed. The recipes featured have ingredients that are usually staples in your kitchen and each one has very easy to follow directions. If comfort food is what calls you to the dinner table then The Amish Family Cookbook is the book for you. I thought I would share a recipe from the book for Cheesy Potato Soup since the weather in my neck of the woods will be turning a wee bit nippy. Soup is always good when cold weather moves in. Enjoy!
Cheesy Potato Soup
½ cup butter, melted
1 medium onion, chopped
1 celery rib, chopped
2 T. Flour
4 cups milk
1 can condensed cream of mushroom soup
½ cup Cheddar cheese, shredded
6 large potatoes, peeled, diced, and cooked in salt water
1 tsp. seasoned salt
Sauté onion, celery, and carrot in butter. Stir flour in until blended. Gradually add milk. Cook and stir for two minutes or until thickened. Add soup, cheese, potatoes, and seasoned salt. Cook and stir until cheese is melted and soup is heated through. Yield: 10-12 servings
